Ever since ancient times, long-term food preservation has been a matter of concern for mankind. Freeze-drying of fruits and other products goes back to the middle of the 19th century. Still, no one in the general public had heard of this preservation technique until the end of the 20th century. A common occurrence of this method, however, began at the beginning of the last decade.

The general idea is to remove almost all the moisture from the plant (vegetable, fruit) or meat products gently while avoiding damage to the fibers.

The freeze-drying process starts with flash freezing. It usually happens at a temperature of about 200° C (392° F) below zero. When the liquid in a berry turns into ice crystals under these conditions, it does not greatly increase in volume, as it does with a slower temperature drop. This allows you to preserve the integrity of the fruit structure and avoid mechanical damage, which in the end would only reduce the gustatory and nutritional qualities of the product.

Once that’s done, the temperature can be increased, gently and smoothly, to the highest point of 40° C (104° F). Along with heating, the air is pumped out of the container with the product to a full vacuum. This way, the water solidified as ice crystals can be removed, almost without passing into the liquid state.

  • no negative consequences of standard freezing or dehydrating, such as loss of shape, vitamins, flavor, exposure to harmful components;
