Homemade ice cream recipe with Siberian berry freeze-dried powder

The easiest way to make homemade ice cream is to whip cream with a blender and top it with condensed milk and a spoonful of your favorite Siberian berry powder. We added some cloudberries. The resulting flavor is unusual with a bit of sourness. This healthy and unusual ice cream will cheer you up even on the most routine day.

Ingredients for 3 servings of ice cream:

Instructions:

  1. Whip the cooled cream for about 3 minutes to produce peaks.
  2. Add condensed milk and cloudberry powder. Continue whipping for another minute.
  3. Put the resulting mixture into a container, cover with a lid and leave in the freezer for 3-5 hours.
  4. Spoon into the glass bowls and decorate with mint leaves.

Delicious Carrot Cake Recipe for Easter! HAPPY EASTER!

To celebrate the glorious holiday of Easter, we have prepared for you our version of carrot cake recipe. The special ingredients of our recipe are Siberian pumpkin seed flour, Siberian carrots powder, and Siberian pine nuts. All those make the cake not only incredibly tasty, but also healthier.

Dough ingredients:

 Instructions:

Whip two eggs with 150 grams of sugar. Add 120 grams of odorless vegetable oil. Sift in 80 grams of wheat flour + 30 grams of pumpkin seed flour. Add 2 grams of baking soda and 4 grams of baking powder to the flour. Use a mixer to blend everything thoroughly. Add 130 grams of finely grated carrot + 30 grams of carrot powder. Mix everything, add pine nuts if desired. Bake at 170 C for about 20 minutes.

Cake cream:

Mix together 250 grams of cottage cheese, 70 grams of powdered sugar, 70 grams of 33% fat cream, and give it a good whisk.

Cut the cake into layers, place the cream in between and on top, sprinkle with freeze-dried carrots powder and pine nuts.

For the shortbread crust, you will need:

  • 60 g of butter
  • 30 g of sugar
  • 200 g of flour

Mix the ingredients together, roll the dough out on a baking paper sheet, and bake it for 5 minutes at 180° C. Then grind with a blender and form the crust inside the baking tin.

For the cheesy filling, the following ingredients are needed:

Stir the mixture using a wooden or silicone spatula. Take your time to add the ingredients one by one. After 20 minutes, pour the prepared cheesy filling over the shortbread crust, tapping the tin lightly against the table to remove the air bubbles.

For namelaka (cheesecake jelly topping):

Let the gelatin soak in water, then dissolve with the milk. Add chocolate and berry powder. Pour the mixture over the top of the cheesy feeling. The topping is to add a beautiful pink color and an amazing flavor to your cheesecake.

You will get Strawberry Cheesecake with a diameter of 12 cm.

Ingredients:

  • 2 eggs
  • 110 g of sugar
  • 120 ml of cooking oil
  • 100 g of wheat flour
  • 50 g of pumpkin seed flour
  • 2 g of baking soda
  • 4 g of baking powder
  • 160 g of grated carrots
  • pinch of salt

Method:

Mix together the eggs with a pinch of salt and sugar. Give it a good whisk with a mixer for about 5 minutes. Add cooking oil, dry ingredients, and mix. Then add grated carrots and mix again.

Fill the molds 2/3 full with dough and bake at 180C for 20-25 minutes.

Our Berry Version of a Delicious Macarons Recipe

Macarons Recipe

The following version of the Macaron Recipe will appeal to fans of berry variations. For the layer here we will use pomegranate. Feel free to take any other berry from our selection.

Ingredients (for 5 servings):

  • 175 g of almond flour;
  • 135 g of powdered sugar;
  • 110 g of egg white;
  • 2 g of albumin;
  • 150 g of sugar;
  • 35 g of water;
  • pinch of salt and citric acid;
  • 2 g of pomegranate freeze-dried powder.

Ganache:

Start with the layer. Cool the pomegranate ganache and put it in the fridge for 6 hours. Then prepare the macaronage. Use your discretion to adjust the intensity of the color until you get the desired shade. Shape into halves and bake in the oven. Let cool, then glue them together with the berry ganache.
