Pumpkin Muffins. Pumpkin seed flour muffin recipe
Ingredients:
- 2 eggs
- 110 g of sugar
- 120 ml of cooking oil
- 100 g of wheat flour
- 50 g of pumpkin seed flour
- 2 g of baking soda
- 4 g of baking powder
- 160 g of grated carrots
- pinch of salt
Method:
Mix together the eggs with a pinch of salt and sugar. Give it a good whisk with a mixer for about 5 minutes. Add cooking oil, dry ingredients, and mix. Then add grated carrots and mix again.
Fill the molds 2/3 full with dough and bake at 180C for 20-25 minutes.
